Chocolate Crinkles

1/2 cup oil (a light oil)
4 ounces unsweetened baking chocolate, melted and cooled
2 cups sugar
2 tsp vanilla
4 eggs
2 cups unbleached flour
2 tsp baking powder
1/2 tsp salt
1/2 cup icing sugar

Mix oil, chocolate, sugar and vanilla in large bowl.
Add in eggs. Combine dry ingredients and add.
Cover and refrigerate a few hours.

Preheat oven to 350ºF.
Using a small scoop, drop dough into powdered sugar, maybe six at a time.
Roll around to coat, and shape into balls.
Place about 2 inches to center on cookie sheet.
Bake 9 to 11 minutes or until almost no imprint remains when touched lightly in center.
Place on a wrack to cool.
