Impossible Coconut Pie


4 large eggs, or 3 extra large eggs

6 tablespoons butter, melted

3/4 cup white sugar

1/2 cup flour

1/4 teaspoon salt

1/2 teaspoon baking powder

2 cups milk

1 cup coconut
, I use the sweetened kind
1/2 teaspoon vanilla

Combine the dry ingredients into a bowl and mix in the melted butter.
Then stir in the eggs.
Mix in the milk and vanilla. Stir in coconut
Pour into a buttered deep pie dish.
Bake at 350F or gas mark 4 for 1 hour

When cooked the crust will be at the bottom,
the custard in the center
and the coconut on the top.
